I love smores. Not just because of the gooey marshmallow, graham cracker, chocolate goodness (although that is a definite plus!) But because of all the memories that go along with this sweet treat. I remember beach bonfires, summer BBQ’s, camping trips, and being pregnant with Little J. My two biggest cravings throughout my pregnancy were hamburgers and smores. The hubby would start the fire pit in the backyard and we would make smores, and when it was raining, I might have made them over the stove inside. We went through several boxes of graham crackers that summer.
I was looking for a dessert idea on Pinterest and found several variations of this summer time sweet memory. This is such a great dessert to bring for a crowd! No utensils needed, just grab and go and they are super easy to put together with three simple ingredients.
Start by breaking your graham crackers into half and then quarters. You can keep them in half if you would like a bigger serving size, but they might be a bit messier when eating. Melt your chocolate (I used Ghiradelli Dark Melting Wafers.) They were so easy to use and allowed me to melt my chocolate in small batches. I also recommend using a small deep glass ramekin which will allow the chocolate to go at least halfway up the graham cracker.
Spread a thin amount of marshmallow cream on one graham cracker and sandwich another graham cracker on top. Too much marshmallow cream will cause it to drip down the sides of the graham crackers.
Lastly, dip your marshmallow graham cracker sandwich into your melted chocolate and allow excess chocolate to drip off. Set aside to dry on a piece of parchment paper and enjoy! A perfect sweet treat for adults and kids alike!
